Curried Carrot Soup Recipe

Ingredients for Curried Carrot Soup
½ tsp curry powder
2 cups roughly chopped carrot
½ cup roughly chopped onions
½ cup roughly chopped potatoes
1 tbsp butter
¼ cup finely chopped onions
¾ cup milk
salt to taste


Method for Curried Carrot Soup?
1. Combine the carrot, onions, potatoes and 3 cups of water in a deep pan and cook on a medium flame for atleast 10 minutes or till the vegetables are cooked.
2. Allow the vegetables to cool and blend in a mixer to a smooth purée. Keep aside.
3. Heat the butter in a deep pan, add the onions and sauté on a medium flame for 1 minute.
4. Add the curry powder, carrot purée, milk and salt, mix well and cook on a medium flame for 4 to 5 minutes, while stirring occasionally.
5. Serve hot.
