Ingredients for Thai Green Rice
1 cup long grained rice (basmati) , soaked for 30 minutes and drained
2 tsp oil
1 bayleaf (tejpatta)
salt to taste
1 bunch lemon grass (hare chai ki patti)
¼ cup finely chopped mint leaves (phudina)
¼ cup finely chopped basil
¼ cup finely chopped coriander (dhania)
1 tbsp finely chopped green chillies
¼ cup coconut milk (nariyal ka doodh)

¼ cup finely chopped basil

Method for cooking Thai Green Rice
1. Heat the oil in a deep non-stick pan, add the bayleaf and sauté on a medium flame for 30 seconds.
2. Add the rice, mix well and sauté on a medium flame for 1 to 2 minutes.
3. Add 1¾ cups of hot water, salt, lemon grass bunch (tied with a thread), mix well and cook on a medium flame for 8 to 10 minutes or till the rice is 95% cooked.
5. Remove the lemon grass bunch and discard it.
6. Add the mint leaves, basil, coriander, green chillies and coconut milk and mix well. Cover with a lid and cook on a slow flame for 2 to 3 minutes, while stirring occasionally.
7. Serve immediately.
