Ingredients for Veggie Stuffed Chicken Piccata
Boneless chicken breasts 2
Butter for greasi
Green zucchini cut into 2 inch strips ½ medium
Capsicum mixed strips 1 cup
Salt to taste
Crushed black peppercorns to taste
Dried mixed herbs to sprinkle
Red chilli flakes to sprinkle
Balsamic vinegar for drizzling
Method for Veggie Stuffed Chicken Piccata
1. Preheat oven to 180° C.
2. Thinly slice chicken breasts horizontally and flatten them with a steak hammer. Halve each flattened chicken piece.
3. Grease the baking tray with some butter and place the chicken pieces. Place one zucchini strip and few mixed capsicum strips in the center of each chicken piece.
4. Sprinkle some salt, crushed peppercorns, dried mixed herbs and chilli flakes on top and drizzle some balsamic vinegar. Roll the prepared chicken pieces, brush some butter on top and drizzle some more balsamic vinegar.
5. Place the tray in the preheated oven and bake for 8-10 minutes.
6. Serve hot.
