Ingredients for Creamy Red Rice Risotto
Red rice 1½ cups
Butter 4 tablespoons
Onion sliced 1 medium
Garlic cloves finely choppedh 2-3
Mixed herbs fresh, chopped 1 tablespoon
Vegetable stock 6 cups
Salt to taste
Black peppercorns crushed 10-12
Frozen green peas ½ cup
Cream ½ cup
Mascarpone cheese 1 tablespoon
Parmesan cheese shavingsfor garnishing
Fresh parsley sprigs for garnishing

How To Cook Creamy Red Rice Risotto ?
1: Heat butter in a non-stick pan. Add onion, garlic and mixed herbs, mix well and sauté till onion turns golden brown.
2: Add rice and sauté for 2-3 minutes. Add 1 cup vegetable stock, salt and crushed peppercorns and simmer till the stock is absorbed.
3: Repeat the same with the remaining stock, adding 1 cup at a time. Add peas, mix and cook for 1 minute.
4: Add mascarpone cheese and mix gently.
5: Sprinkle parmesan cheese shavings, garnish with parsley sprigs and serve hot.
