Fish with Roasted Pepper and Coriander Dressing Recipe

Ingredients for Fish with Roasted Pepper and Coriander Dressing
Fish Fillets boneless, cut into 3 inch pieces 600 grams
Red capsicum roasted, peeled and diced 1 large
Fresh coriander leaves chopped ¼ cup
Salt to taste
Crushed black peppercorns to taste
Lemon juice 2 tablespoons
Olive oil 3 tablespoons
Garlic cloves chopped 6-8
Fresh parsley chopped 2 tablespoons
Red chilli flakes 1 teaspoon


Method for Fish with Roasted Pepper and Coriander Dressing
1. Place fish pieces on a plate. Sprinkle salt, crushed peppercorns and 1 tablespoon lemon juice and spread evenly on the pieces. Set aside for 10-15 minutes.
2. To make the dressing, heat 2 tablespoons olive oil in a non-stick pan. Add garlic and sauté for 2 minutes.
3. Add capsicum, coriander leaves, parsley, chilli flakes, salt and crushed peppercorns, mix well and sauté for 1 minute. Add remaining lemon juice and remove from heat. Set aside.
4. Heat the remaining oil in a non-stick grill pan. Place the marinated fish pieces on it and cook for 2 minutes on each side.
5. Serve hot with the prepared dressing.
