Vegetable Egg Bake Recipe


Preparation Time: 20 mins
Cooking Time: 3 mins
Total Time: 23 mins

Ingredients For The Egg Mixture
6 eggs
¼ cup milk
salt and freshly ground black pepper (kalimirch) to taste


Ingredients For The Vegetable Stuffing
½ cup chopped onions
¼ cup chopped capsicum
¼ cup cherry tomato halves
½ cup finely chopped spring onions whites and greens
1 cup shredded spinach (palak)
1 cup sliced mushrooms (khumbh)
1 tbsp butter
1 tbsp finely chopped garlic (lehsun)
1 ½ tsp finely chopped green chillies
salt to taste

Other Ingredients
1 cup grated processed cheese

Method For the egg mixture
1. Break the eggs into a deep bowl, add the milk and salt and pepper and beat very well using a fork. Keep aside.

Method For the vegetable stuffing
1. Heat the butter in a broad non-stick pan, add the garlic, green chillies and onions and sauté on a medium flame for 1 minute.
2. Add the capsicum, tomatoes, spring onions, spinach, mushrooms and little salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.


How to proceed for Vegetable Egg Bake?
1. Sprinkle ¾ cup of cheese in a greased baking dish and spread it evenly.
2. Put the prepared vegetable stuffing over it and spread it evenly.
3. Finally pour the egg mixture evenly over it.
4. Sprinkle the remaining ¼ cup of cheese evenly over it.
5. Bake in a pre-heated oven at 180ºc (360ºf) for 40 minutes.
6. Cut into 4 equal pieces and serve immediately.
