Ingredients for Vegetable Chow Chow
¼ cup diagonally cut capsicum
½ cup diagonally cut and blanched carrot
½ cup blached cauliflower florets
½ cup diagonally cut and blanched french beans
½ cup shredded cabbage
1 ½ tbsp cornflour
1 tbsp oil
1 tbsp chopped garlic (lehsun)
2 tsp finely chopped green chillies
¼ cup chopped spring onions (whites and greens)
1 tsp soy sauce
1 tsp sugar
salt to taste

½ cup diagonally cut and blanched french beans

Method for cooking Vegetable Chow Chow
1. Combine the cornflour and 1½ cups of water in a deep bowl, mix well and keep aside.
2. Heat the oil in a broad non-stick pan, add the garlic, green chillies and spring onions and sauté on a high flame for 1 minute.
3. Add the capsicum, carrot, cauliflower and french beans and sauté on a high flame for 2 minutes.
4. Add the cabbage, soya sauce, sugar, cornflour-water mixture and salt, mix well and cook on a high flame for 2 minutes, while stirring occasionally.
5. Serve immediately.
