Ingredients for Vegetable and Basil Soup
½ cup finely chopped onions
¾ cup finely chopped capsicum (red , yellow and green)
¼ cup finely chopped french beans
¼ cup finely chopped carrot
¼ cup finely chopped cabbage
2 tbsp finely chopped celery (ajmoda)
¼ cup fresh basil leaves
2 tsp olive oil
1 tsp finely chopped garlic (lehsun)
1 tsp finely chopped green chillies
4 cups vegetable stock
salt and to taste

Method for cooking Vegetable and Basil Soup
1. Heat the olive oil in a deep non-stick pan, add the garlic and green chillies and sauté on a medium flame for 10 seconds.
2. Add the onions, coloured capsicum, french beans, carrot, cabbage and celery and sauté on a medium flame for 3 to 4 minutes.
3. Add the vegetable stock and salt, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
4. Meanwhile, combine the basil leaves along with ¼ cup of water and blend in a mixer till smooth.
5. Add the basil mixture and black pepper powder to the soup, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
6. Serve immediately garnished with basil leaves.
