Zucchini and Carrot Clear Soup Recipe

Total Time: 35 mins

Ingredients for Zucchini and Carrot Clear Soup
2 tbsp oil
2 tsp chopped garlic (lehsun)
2 tbsp chopped onions
½ tsp baharat
salt to taste

½ tsp freshly ground black peppercorns (kalimirch)
¼ cup chopped tomatoes
4 cups vegetable stock
¼ cup sliced zucchini
¼ cup peeled and sliced carrots
2 tsp chopped celery
3 tbsp chopped parsley


Method for Zucchini and Carrot Clear Soup
1. Heat the oil in a pan add the garlic and onions and sauté till the onions turn translucent.
2. Add the baharat, salt, black pepper and tomatoes and sauté for another 2 minutes.
3. Add the vegetable stock and bring to boil.
4. Lower the flame and add the zucchini, carrots and celery.
5. Cover the pan with a lid and allow to simmer for about 20 minutes or till the vegetables are cooked.
6. Add the parsley and mix well.
7. Serve hot with pita bread.
