Vegetable Jalfrezi Recipe

Ingredients for Vegetable Jalfrezi
1 ½ cups chopped and boiled mixed vegetables (french beans , carrots and green peas)
1 tbsp oil
1 ½ tsp finely chopped green chillies
½ tsp grated ginger (adrak)
½ cup finely chopped onions
1 ¼ cups finely chopped tomatoes
1 tbsp finely chopped coriander (dhania)
5 tbsp tomato ketchup
4 tbsp finely chopped spring onion greens
½ tsp chilli powder
1 tsp sugar
salt to taste



Method for Vegetable Jalfrezi
1. Heat the ghee in a deep kadhai, add the green chillies, ginger and onions and sauté on a medium flame for 1 minute.
2. Add the tomatoes, tomato ketchup and coriander and cook for 3 to 4 minutes, while stirring occasionally.
3. Add the, boiled vegetables, spring onions, chilli powder, sugar, salt and 2 tbsp of water and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
4. Serve hot.
